I find myself many evenings asking myself the same question, What's for dinner?
Today I will share with you my Mediterranean quick and easy to prepare dinner.
500 Gm - Cottage cheese
1/2 Cup - Shredded cheddar cheese
500 Gm - Frozen or Fresh Veggies (any kind will do!)
1 Tsp of vegetable stock seasoning ( I use vegeta)
Salt & Pepper to taste.
2 Tbsp - Bread Crumbs
Pre-heat oven to 350° F
In a medium sided bowl beat the eggs with the seasoning. Then add the cottage cheese and the shredded cheddar. Mix well.
Once the eggs and cheese have been mixed together, add in your vegetables, you can mix and match any vegetables that you like. I LOVE broccoli, cauliflower, spinach and Sautéed onions!
Next get yourself a rectangular pan and spray on a light coating on nonstick oil spray. Once your pan is sprayed pour your mixture in!
Cover the pan with aluminum foil and place into your preheated oven and bake for 40 minutes.
Five minutes before baking is done take off the aluminum cover and cook until golden brown.
This dish goes well with a side salad!
